Single Pot Still whiskey – or pure pot still whiskey – is traditionally a product from Ireland, and steeped in tradition. The folks at Talnua Distillery in Arvada opened up one of the only Single Pot still distilleries outside of Ireland. To be classified as Single Pot still, the whiskey must be distilled at a single distillery from a mash made of a mix of malted and unmalted barley. If you want to learn a lot about the process from someone who really, really loves the process and the spirit, then go pay them a visit. In fact, you really should stop in anyway.
Color: Clear and oily with a rust quality.
Nose: Cereal grains and chocolate are complimented by notes of tobacco, apricot and a slight hay or straw quality.
Palate: Light, dried fruit, oily and coating. some baking spices, cinnamon, and hints of tobacco. Ripe dark cherries.
Finish: Dry with notes of chocolate and some baking spices, and an almost chewy quality from the oily texture. A surprisingly easy finish considering that it is pretty young.
With Water:
Nose: More chocolate and dried fruits, with toasted sugar or molasses and some dark ripe cherries.
Palate: Dark chocolate, cereal grains, and hints of tobacco. Not a sweet sip, but brown sugar flavors are still apparent.
Finish: Fruit and banana finish, but dry with a little bit less of the chewy/oily texture.

What an excellent bottle. It definitely lends itself as a great compliment to a dessert like Cheesecake. This is definitely something that we are thrilled to have landed a bottle of, and can’t wait for the next years release.
