The Colorado Whiskey industry is really starting to take off. With new distilleries popping up everywhere, it is becoming really exciting to keep up with. Today we have State 38’s Colorado Bourbon Whiskey.
This Bourbon is made with corn and malted barley, and cut at the end with water that rested in new American White Oak. State 38 also “Pink Floyd” ages their whiskey, which is to say they play Pink Floyd where the barrels are resting. The sound waves actually help the whiskey move in and out of the oak. This whole process helps make a mellow oaked whiskey.
Let’s start off. Here is the State 38 DC Loveday Colorado Bourbon:
Color: Light Amber
Nose: Starting off, this bourbon hits your nose with chocolate, some coffee, and sweet corn smells. There are notes of Candy Corn, caramel, and corn syrup.
Palate: The front of the palate hits you with some Caramel, that moves into a smooth mid palate with some oak and dark chocolate, followed by a strong, rich, black coffee flavors.
With a little bit of water added, this bourbon opens up a ton. Definitely one to enjoy over an ice cube. The nose is still full of candy corn, caramel, chocolate and coffee.
The palate with water is really what opens up, bursting with that caramel flavor, hints of cinnamon, dark chocolate flavors, and black coffee, but the bitterness from the coffee is gone. The finish stays around for a long time. This is a terrific cold weather bourbon. As Angie puts it, it “warms the soul.”

This is one that is great for the weather that we are currently having, cold and snowy. Pour a glass on the rocks and sit in a hot tub while the snow falls around you.
