Mystic Mountain 2021 Outlaw Legend

Mystic Mountain Distillery out of Larkspur I would definitely say is a friend of ours. The folks there are always spectacular to deal with. They are friendly, knowledgeable, and love making delicious drinks for everyone who comes through their doors. Each year, they release a new version of their Outlaw Legend, a limited Holiday release that always hits as a perfect winter night’s dram. This most recent release follow this trend. Sweet, some great spices, but this year they have outdone themselves. I am happy to say this is my favorite release they have put out. Layered, great mouthfeel, complex, and still an easy drinking whiskey all make this a great pour.

Mashbill:

As this is considered a straight bourbon whiskey, it is a minimum 51% Corn. We don’t have the specific mash details on this bottle at this time. 

Age:

3 Years in New American Oak Barrels.

Proof:

96 Proof (48% ABV)

In the Glass:

Color: 

A pale, golden straw with a brass tinge. 

Without Water:

Nose:

Vanilla and Nutmeg both jump out right away. Notes of butterscotch toffee, cinnamon, and light hints of pipe tobacco. 

Palate: 

Vanilla and sugar hit right up on the front of the palate, making an extremely sweet first impression. The mid palate is not as sweet, with some all spice, white pepper, and cinnamon. The mouthfeel is thick and creamy. 

Finish: 

After the sweet start, the finish of this is surprisingly dry. It lingers for a very long time with notes of leather and tobacco. 

With Water:

Nose:

Tobacco and sweet, sugary vanilla come out. The butterscotch toffee really fades out of the nose. 

Palate:

The few drops of water actually served to really lessen the thick and creamy mouthfeel. There is still good sweetness up front, and some solid baking spices on the mid palate, though not quite as much. 

Finish: 

It really holds it’s length, still lingering for a long time. The notes of Tobacco and leather still come through, leaving a satisfying dry taste after the sip. 

Final Thoughts:

As I said at the beginning of this post, for my particular palate this bourbon is fantastic, but definitely needs to be enjoyed straight. Mystic Mountain nailed the layered, complex, and terrific flavors while still being easy to sip. This truly makes this bottle a terrific bottle for warming up on a chilly winter’s night.
