Elkins Colorado Whiskey continues to be a unique whisky that is only found here in our beautiful state. Settled into Estes Park, and overlooking some of the best views in the state, it’s hard not to fall in love with the distillery just by sitting outside in an Adirondack chair. Then you have a glass of whisky or one of their cocktails, and you know you’ll be back time and time again.
Our sample of the Colorado Honey certainly did not deter our opinion of this wonderful distillery, and it’s going to make some excellent cocktails.
In The Bottle:

Not Listed, going to be their mostly corn whiskey. Mixed with Colorado Honey and Vanilla.

Nose:
The nose is not overly sweet at all, where I was expecting a vanilla and honey punch, those notes were complimented well by corn and whisky notes. The honey notes were very much more the raw honey, not overly processed. Extremely enticing.
Palate:
The Palate is sweet. From right up front all the way through, this is a sweet sip, maybe a little too sweet for my preference to be drank just on it’s own regularly. Again though, the honey is really raw, very much like getting local made honey instead of the processed honey in the bear shaped bottles. The sides and middle of this are complimented very well with some vanilla notes as well. The overall mouthfeel is thick, almost chewy.
Finish:
A very impressive and surprising come back of the whisky flavors, corn white whiskey comes out of seemingly nowhere to add a layer to the finish that is delightful. It is a long, thick, and creamy finish-again with a chewy quality to it.
Final Thoughts:
This is an excellent flavor yet again, proving that you don’t need to leave the state to find some delicious flavors of whisky.
I have been really into tea lately, finding that Earl Grey tea really benefits from a small amount of vanilla syrup. As honey always goes well with tea, I made myself a cup of Earl Grey with a small pour of this whisky into it. Let me say, that is my go to warm up drink when I get back inside from doing anything out in the cold weather.
