Cask Mates is something we have seen a few times before, but Mystic Mountain and Satire Brewing have done something with it that we have not seen before this bottle. After holding the Outlaw Legend Bourbon for 3 years, the cask is handed over to Satire Brewing who then age their Barley Wine in the barrel. Once the barley wine has finished aging, the barrel goes back to Mystic Mountain who then finish the whiskey in the same casks. The result is an extremely unique finished whiskey that is not quite like anything we have tried before. Please note this was a free bottle for us to review.

Color: Before opening the bottle, you notice that there is a good amount of sediment on the bottom of the bottle. Once in the glass it is a cloudy golden amber.

Nose: We each got different notes on the nose, Angela picking up orange and citrus, molasses and brown sugar. Zach got notes of a crisp candied apple accompanied by earthy and malty scents.

Palate: Earthy hay notes accompanied by some dry baking spices-nutmeg and cinnamon-as well as some hints of honey and wheat. Both of us agreed that it gave a tingling sensation on the tongue that was not from alcohol.

Finish: Semi bitter but with very little heat, and lots of dry baking spices. The finish lasts a long time, lingering with the dry baking spice flavor for quite a while.

With Water:

Nose: Again, we differed here on the flavors. Angela got dark fruits, and cherry cola notes. Zach was picking up even more of the sweet and crisp candied apple.

Palate: Notes of honey and bread, dry spices and dark chocolate. The sip gives the impression of oatmeal. The tingle remains through the sip with water added.

Finish: A bit sweeter honey, but still lots of dry spices. The finish is as complex as the rest of the sip.

An interesting, complex sip, this whiskey subverts expectations in an excellent way. It was interesting to see that we didn’t pick up a lot of the same notes on the nose, but had a lot of the same flavors on the palate. Mystic Mountain continues to put out a well done product, even while also still making tons of hand sanitizer that they are both selling and donating to first responders all around.
